I decided this morning to take a Weight Watchers muffin recipe and bump it up a notch in the health department. I think it turned out well!
And at just 108 calories, 1.5 grams of fat, 1.6 grams of fiber and 4.2 grams of protein per serving, they make a great snack or addition to your breakfast.
Here’s my recipe. Try it yourself and see if you agree.
Flax Fruit Muffins
1 3/4 c whole wheat white flour
4 t sugar
2 t baking powder
1/2 t salt
1 t cinnamon
1/2 t nutmeg
12 t ground flaxseed meal
3/4 c plain nonfat yogurt
1/2 c nonfat milk
1 whole egg
1 c frozen fruit, your choice
Preheat oven to 400. Mix all dry ingredients together. Add wet ingredients and mix until combined, adding the fruit last.
Spray a muffin tin with cooking spray and pour batter evenly in 12 muffin cups. Bake for 20 minutes, or until muffins are slightly brown.
